The thickening or gelling of protein-based dairy streams and ingredients upon exposure to heat has been an ongoing problem in dairy processing for many decades. This phenomenon can restrict the range of dairy product options and reduce manufacturing efficiencies by limiting the type and extent of heat treatment that can be used. In this report, we outline a novel approach to overcoming this problem. The use of preheating treatments to induce whey protein aggregate formation in whey products is well known in the field. However, we show that the application of ultrasound for a very short duration after such a heating step breaks down these aggregates and prevents their reformation on subsequent heating, thereby reducing the viscosity increase that is usually associated with this process. This novel technique has the potential to provide significant economic benefit to the dairy manufacturing industry.

Cavitation has been a hot research topic for scholars in various fields because of the intense mechanical, chemical, and thermal effects of bubble collapse. It forms a cluster of bubbles, and the bubbles will affect, interfere with, and couple with each other. To grasp the main factors affecting bubble collapse and the interbubble mechanism, the paper adopts the molecular dynamics simulation combined with the coarse-grained force field to study the collapse process of the double bubble model and takes the dynamic shape change of the bubbles, the local velocity distribution, and the local pressure distribution as the object to summarize the position angle, the shock velocity, and the bubble distance on the collapse law and the primary and secondary influence relationship and then reveals the interbubble mechanism.

Wearable thermoelectric generator (TEG) can collect human body heat and convert it into electrical energy, achieving self-powering of the device and thus becoming a hot research topic at present. By utilization of three-dimensional spiral thin-film thermoelectric structures and passive radiation cooling methods, the heat transfer area can be increased and power generation can be enhanced. In order to study the effect of outdoor radiation cooling on the thermoelectric performance of spiral heating, as well as the TEG performance output under different external environments and circuit loads, this paper proposes a new three-dimensional coupled numerical model of the spiral thermoelectric wristband system with multiple physical fields.
