The transmission of an optical beam through the compound cell of a differential refractometer with an absorbing sample is analyzed. Formulas for the lateral shift and the deflection angle of the transmitted optical beam for a complex refractive-index difference are obtained.

The refractive index of a liquid serves as a fundamental parameter reflecting its composition, thereby enabling the determination of component concentrations in various fields such as chemical research, the food industry, and environmental monitoring. Traditional methods for refractive index (RI) measurement rely on light deflection angles at interfaces between the liquid and a material with a known refractive index. This study describes the design and performance of a deflection-type refractometer based on measuring the fringe shift from the Fresnel diffraction pattern to solve some major limitations of conventional differential refractometers, such as measurement range, resolution, zero balancing, and monitoring analysis. The refractometer apparatus comprises a coherent light source, linear Fresnel zone plate, measuring cell, and image capture device mounted on a movable platform. The distance measurement unit is configured to detect fringe deflection due to the difference in refractive index between the sample and the reference.

Infant formula (IF) is a complex matrix requiring numerous ingredients and processing steps. The objective was to understand how the quality of protein ingredients impacts IF structure and, in turn, their kinetics of digestion. Four powdered IFs (A/B/C/D), based on commercial whey protein (WP) ingredients, with different protein denaturation levels and composition (A/B/C), and on caseins with different supramolecular organisations (C/D), were produced at a semi-industrial level after homogenization and spray-drying.
