Changes in the total, free and bound activity of collagenase of the intramuscular connective tissue were studied during beef muscle maturation (2 degrees C). Lysosomes were isolated by differential centrifugation. The studies showed a relatively rapid release of collagenase from lysosomes and a comparatively high stability of the enzyme during slow autolysis of muscles.
