: The water footprint (WF) provides information on the impact of individual foods on water consumption, but to better direct food production toward water saving, we need to understand how to reduce the WF of our diets while keeping it healthy. In this study, we compared the WF of healthy diets based on national food-based dietary guidelines with the aim of highlighting changes in dietary patterns that could reduce water requirements without compromising nutritional adequacy. : Three 2000 kcal/day dietary patterns were elaborated following the Italian, Spanish, and American dietary guidelines, and their total, green, blue, and grey WFs were calculated.

Litchi is one of the ancient fruits that originated in China, renowned for its high nutrition and rich flavor, and Xianjinfeng (XJF) stands as one of the most notable varieties in terms of its flavor. Investigating the metabolic changes in taste compounds during fruit development offers deeper insights into the formation patterns of fruit quality. The feasibility of the two methodologies was confirmed to compare the results of determining mung bean origins using Raman and Near-Infrared (NIR) spectroscopy. Spectra from mung beans collected in Baicheng City, Jilin Province; Dorbod Mongol Autonomous, Tailai County, Heilongjiang Province; and Sishui County, Shandong Province, China, were analyzed. We established a traceability model using Principal Component Analysis combined with the K-nearest neighbor method to compare the efficacy of these methods in discriminating the origins of the mung beans.

Different origins and qualities can lead to differences in the taste and aroma of tea; however, the impacts of origin and quality on the taste and aroma characteristics of Wuyi rock tea and Huizhou rock tea have rarely been studied. In this study, high-performance liquid chromatography (HPLC), gas chromatography-mass spectrometry (GC-MS), and sensory evaluation methods were used to compare the quality components of Wuyi rock tea and Huizhou rock tea. Given the natural origins of flavylium derivatives, their chemical modifications, and their large potential uses in food, medicine, or green chemistry, the present review is a comprehensive study of flavylium-derived compounds. Several topics such as the green extraction and isolation techniques of flavylium derivatives including their chemical modifications and various characterization tools such as NMR, HPLC, and mass spectrometry are discussed in the review. Furthermore, the use of these derivatives in medicine, food, and materials science is presented, highlighting their relevance and the need for further investigation.
