Optimum conditions for the biosynthesis of isomaltulose synthase by submerged cultures of the bacterium Erwinia rhapontici, grown in the presence of 10% sucrose, have been determined (temperature of culturing, 30 degrees C; initial pH level, 7.5; duration of culturing, 54 h). The electrophoretically homogeneous preparation of the enzyme, thus obtained, had a specific activity of 210 U/mg protein. Optimum function of the enzyme was observed at 30 degrees C and pH 6.0. Isomaltulose synthase exhibited maximum stability at 20-30 degrees C and pH 6.0-7.0. The catalytic activity of the enzyme amounted to 3300 U/cm3, which is 40 to 50 times higher that the values reported for strains studied previously.

The wilting and yellowing of leafy vegetables caused by spoilage bacteria resulted in serious resource wastage. This study investigated the efficacy of a combined lactic acid (LA) and tartaric acid (TA) treatment against four predominant spoilage bacteria (Erwinia persicina, Citrobacter freundii, Pseudomonas putida, and Pseudomonas punonensis) isolated from spinach and oilseed rape. Detailed analysis using Fourier-transform infrared spectroscopy, flow cytometry, scanning electron microscopy, and light microscopy revealed substantial cellular damage in the bacteria treated by LA and TA, including loss of intracellular material, and collapse of cellular morphology, as well as effective biofilm removal.

Fire blight, caused by Erwinia amylovora, is a significant threat to fruit crops, with limited biocontrol methods. This study aimed to develop a nanosystem using mesoporous silica nanoparticles (MSNs) loaded with a phenolic plant extract (ZP) derived from Myrtus communis, Thymus vulgaris, and Curcuma longa, and coated with natural biopolymers Gum Tragacanth (GT) and sodium alginate (SA). The MSNs were synthesized and characterized by XRD, FTIR, and TEM, exhibiting a specific surface area of about 750 m/g and an average pore diameter of 5 nm.

As nucleus-forming phages become better characterized, understanding their unifying similarities and unique differences will help us understand how they occupy varied niches and infect diverse hosts. All identified nucleus-forming phages fall within the Chimalliviridae family and share a core genome of 68 unique genes including chimallin, the major nuclear shell protein.
