Liquid droplets are proposed as transport vehicles for manipulating microobjects. An atomic force microscope (AFM) cantilever is used as a gripper to pick-up a droplet and then a particle from a hydrophobic substrate. The droplet and the particle are then released to a hydrophilic substrate from the cantilever. During the pick-up and release, the liquid bridge that formed between the gripper and the substrate is studied. The efficiency of micromanipulation is quantified by the term "volumetric distribution ratio," which is the liquid volume retained by the substrate divided by the whole volume of the droplet during the rupture of the liquid bridge. Based on the theoretical analysis, an optimized micromanipulation is suggested which could achieve 100% efficiency by carefully controlling the wetting properties of the gripper and the substrate.

A nanoemulsion was fabricated from Cananga odorata essential oil (EO) and stabilized by incorporation of Tween 80 using ultrasonication. The major constituents of the EO were benzyl benzoate, linalool, and phenylmethyl ester. Differing sonication amplitude (20-60%) and time (2-10 min) were assessed for effects on nanoemulsion droplet size and polydispersity index (PI).

The ternary complex effectively prevents droplet aggregation, Ostwald ripening, and phase separation through its gel network, thereby demonstrating its capability in bioactive compound delivery. In this work, the influence of varying chickpea protein isolate (CPI) levels on the microstructure, gel characteristics, stability and functional properties of grape seed proanthocyanidin (GSP) and konjac gum (KGM) stabilized ternary complexes was investigated. Visual appearance indicated the formation of a non-stratified ternary complex as the CPI enhanced to 3-4 %.

The transmission of virus-containing droplets among multiple people in an outdoor environment is seldom evaluated. In this study, an Euler-Lagrange computational fluid dynamics approach was used to investigate the effects of evaporation and the body thermal plume on the dispersion of coughed droplets under various wind conditions, and the infection risk was evaluated for various arrangements of individuals queuing outdoors using virtual manikin models. The evaporation time was longer for larger droplets and in a more humid environment.

We carried out limited enzymatic hydrolysis with trypsin on rice bran protein (RBP) pretreated by high hydrostatic pressure (HHP) in this study. The effects of the degree of hydrolysis (DH) on the structural and emulsifying properties were investigated. The results indicated that the molecular structure of RBP changed after limited enzymatic hydrolysis.
