We have developed various kinds of ultrafine emulsifying methods using random copolymer of polyoxyethylene (POE)/polyoxypropylene (POP) dimethyl ether [EPDME]. Among ultrafine emulsions made by these methods, it was revealed that an O/W type emulsion, which had prepared with EPDME, sterol surfactant, and polar oils, had a unique structure that had a lamellar structure on the surface of emulsified particles. To clarify the character of the particles and the mechanism of the emulsification, investigation using small angle X-ray scattering (SAXS) measurement and the phase diagram of the emulsion system was done. FF-TEM observation indicated that a few lamellar layers were deposited from the oily ingredients on the surface of the emulsified particle. It was also presumed that the lamellar structure was formed with sterol surfactant and polar oil. The phase diagram analysis suggested that EPDME could form emulsified particles having lamellar structure on the surface of the particle with hydrophilic sterol surfactant in polar oils.

Water-in-oil high internal phase emulsions (W/O-HIPEs) typically rely on large amounts of surfactants to disperse water droplets and usually use crystalline saturated triacylglycerides (TAGs) to enhance processing properties. However, these practices conflict with consumer demands for 'natural' ingredients. This study seeks to develop novel crystal fractions similar to saturated TAGs for the preparation of W/O-HIPEs as low-calorie fat mimetics, focusing on their mechanical and mouthfeel properties, which have received little attention thus far.

Magnetoliposomes containing magnetite, soy lecithin, stigmasterol, and beta-sitosterol of the mean size minor than 160 nm were obtained by a scalable and green process using autoclave and sonication without organic solvents. The formation, size of the liposome, linkage, and encapsulation of the magnetite were evaluated by Cryo-TEM. The stability of magnetoliposomes after storage for 6 months at 4 °C was improved by liposome size, the ability of soy lecithin to preserve the magnetite phase against oxidation, pH, polydispersity index, and zeta potential.
