Although several studies have aimed to identify mare's milk proteins, only the major whey proteins and some caseins have yet been characterized. Incomplete sequencing of the equine genome and the difficulty of recovering highly hydrophobic proteins mean that little is known to date about the proteins associated with milk fat globules, which have been shown to play an important role in newborns' defense mechanisms. The fat fraction, in particular the distribution of unsaturated fatty acids, has been more extensively studied, but complex lipids are only partially elucidated. This study reports a 2-DE approach combined with a powerful method for de novo protein sequencing, and quali-quantitative data on complex lipid composition determined by high performance TLC (HPTLC) and GC. The presence in mare's milk of long-chain highly unsaturated fatty acids, and the evidence of close similarity between equine and human milk fat globule membrane proteins, support the use of mare's milk for human nutrition.

Airag, a fermented mare's milk in Mongolia, exhibits diverse flavors and microbiota due to distinct production processes and environments in nomadic households. Recently, there has been a shift from the traditional cow skin container, 'khokhuur', to a plastic container for airag production, potentially impacting the microbiota and quality. We aimed to evaluate the volatile compounds profile in traditional airag samples collected from two regions, including Bulgan and Uvurkhangai provinces, whereas famous airag-making areas in Mongolia. The volatile compounds of airag were investigated by the GC-MS method. A total of 95 kinds of volatile compounds were detected, and these were classified into 6 different classes: 14 acids, 14 alcohols, 16 aldehydes, 19 esters, 9 ketones, and 23 aliphatic hydrocarbons.

Equine rotavirus A (ERVA) can cause foal diarrhoea and the most common ERVA genotypes are G3P[12] and G14P[12]. Since the introduction of a monovalent killed G3P[12] vaccine, infection in neonates has decreased. Our study reveals increased gut among mare's milk consumers; metagenomic analysis showed a higher prevalence of genera belonging to class in consumers vs non-consumers.
