We studied changes of the hemagglutinating activity of intracellular lectins of the basidiomycete Lentinus edodes (shiitake) at various stages of its morphogenetic development depending on erythrocyte type, growth medium, and lectin purification degree. Under certain experimental conditions, the specific lectin activity at the brown mycelium film stage exceeded the corresponding value for nonpigmented mycelium. The sensitivity of the lectins towards trypsin-treated rabbit erythrocytes was no less than a hundredfold higher than towards any other erythrocyte type studied. The general regularities of specific activity change did not depend on nutrient medium composition. With purification of intracellular shiitake lectins, their sensitivity to human erythrocytes decreased seventyfold or more, whereas their sensitivity to rabbit erythrocytes increased by the same factor.

The Lentinus edodes polysaccharide (LEP) was extracted with a new subcritical water extraction (SWE) enhanced with deep eutectic solvent (DES) method and then purified with a DEAE-52 cellulose column and a Sephadex G-100 column. Two purified polysaccharides (LEP1 and LEP2) were obtained and their structure, antioxidant activity, and immunomodulatory activity were analyzed. LEP1 and LEP2 were composed of mannose, glucose, and galactose with a molar ratio of 1:12.

The effects of frying times (1, 2, 3, and 4 min) and temperatures (140, 160, 180, and 200 °C) were investigated on the nutritional components, color, texture, and volatile compounds of three varieties (808, 0912, and LM) from Guizhou, China. Increased frying time and temperature significantly reduced the moisture, polysaccharide, and protein contents, while increasing hardness and chewiness, and decreasing elasticity and extrusion resilience, negatively impacting overall quality. Optimal umami and sweet amino acid retention were achieved by frying at 160 °C frying for 1-3 min or 140-180 °C for 2 min.

The waste Lentinus edodes stalks from Lentinus edodes processing were used as raw materials by the steam explosion to prepare modified Lentinus edodes stalks dietary fiber and combined with tea polyphenols to form the SE-DF-tea polyphenols complex (SE-DF-TPC). The SE-DF-tea polyphenols mixture (SE-DF-TPM) was prepared according to the complex's optimal adsorption conditions. Fluorescence microscopy, Fourier transform infrared spectroscopy, particle size measurement, thermogravimetric analysis, and X-ray diffraction were used to analyze its structure, and the thermal stability of the complex and its adsorption capacity for lipids, cholesterol, and cholates were studied.
