Glycine picrate (GP), an organic material, was synthesized and successfully grown by solution growth method. Cell parameters of the grown crystals were obtained from the single crystal X-ray diffraction analysis and the presence of functional groups was identified by FTIR study. Its optical properties were examined by UV-vis-NIR analysis, which shows that the crystal is transparent between the wavelengths 400 nm and 1000 nm. Thermal analysis carried out for the glycine picrate reveals that the crystal exhibits a single sharp weight loss at 214 degrees C. The fluorescence spectrum of glycine picrate was recorded. The Vicker's microhardness values were measured for the grown crystal.

Whole utilization of okara has important economic value, but there are two technical barriers: coarse mouthfeel caused by insoluble dietary fiber (IDF) and undesirable "beany" off-odors. UV-A irradiation and/or microbial fermentation were used to modify okara. The results indicated that single and combined treatments increased the soluble dietary fiber (SDF) content.

Introduction: Tempeh is an antioxidant-rich soybean fermentation product from Java, Indonesia. Cooking methods have an impact on the nutritional value and bioactivity of food.
Objective: This study aims to investigate how the cooking process affects the metabolites and antioxidant activity in tempeh using ultra-high-performance liquid chromatography-high resolution mass spectrometry (UHPLC-HRMS).

The synthesis, antioxidant capacity, and anti-inflammatory activity of four novel -benzyl-2-[4-(aryl)-1-1,2,3-triazol-1-yl]ethan-1-imine oxides - are reported herein. The nitrones - were tested for their antioxidant properties and their ability to inhibit soybean lipoxygenase (LOX). Four diverse antioxidant tests were used for in vitro antioxidant assays, namely, interaction with the stable free radical DPPH (1,1-diphenyl-2-picrylhydrazyl radical) as well as with the water-soluble azo compound AAPH (2,2'-azobis(2-amidinopropane) dihydrochloride), competition with DMSO for hydroxyl radicals, and the scavenging of cationic radical ABTS (2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonate) radical cation).

Optimization of antioxidants and angiotensin-converting enzyme (ACE) inhibitory potential gelatin hydrolysate production from Labeo rohita (rohu) swim bladder (SBGH) by alcalase using central composite design (CCD) of response surface methodology (RSM) was investigated. The maximum degree of hydrolysis (DH), 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS), total antioxidants (TAO), and ACE inhibitory activity were achieved at 0.1:1.
