The specific ethanol production rate of raw starch by arming yeast cells displaying alpha-amylase and glucoamylase increased significantly when the cells and starch granules settled together. The specific ethanol production rate also increased when the size distribution of starch granules was almost same as that of the yeast cells. These results indicate that the surface contact between starch granules and yeast cells is important for increasing the apparent specific activity of alpha-amylase, which was the rate-limiting factor of the direct fermentation.

The presence of exogenous protein can delay starch digestion. However, systematic studies on the effects of protein on starch digestion under various heat treatments still need to be completed. In this study, the effects of exogenous protein and heat treatments on corn starch digestibility were investigated.

Insights into the regulation mechanisms of dual hydrothermal treatment on the structure and digestive characteristics of A- and B-type wheat starch granules.

Food Res Int

State Key Laboratory of Crop Stress Adaptation and Improvement, College of Agriculture, Henan University, Kaifeng 475004, China; Food Laboratory of Zhongyuan, Luohe 462300, China. Electronic address:

Hydrothermal treatment is a physical modification technology to alter starch structures for the production of resistant starch (RS). However, the underlying regulation mechanism of the multiscale structure and digestive properties of starch by dual hydrothermal synergistic treatment remains unclear. To solve this problem, A- and B-type wheat starch granules (AWS and BWS) were separated and subjected to toughening and heat-moisture synergistic treatment (THT) with various moisture content (10 %, 15 %, 20 %, 25 %).

College of Light Industry and Food Engineering, Guangxi University, Nanning 530004, China. Electronic address:

The demand for exploring and investigating novel starches for various applications has been high, yet starches abundant in Millettia speciosa Champ (M. speciose) plants have barely been studied. This study aims to investigate the multiscale structure and physicochemical properties, especially good hot-extrusion 3D printability of M.

Electronic address:

This study was conducted to elucidate the effects of different degrees of substitution (DS) on the properties of propionylated and butyrylated starches and to investigate their efficacy and mechanisms in ameliorating autism-like phenotypes. Fourier transform infrared spectra of propionylated and butyrylated starches revealed the presence of the CO absorption peak at 1730 cm. Additionally, as the DS increased, the surface of the starch granules became rougher, and the crystallinity decreased.

The rising pandemic of obesity has received significant attention. Yet, more safe and effective targeted strategies must be used to mitigate its impact on individual health and the global disease burden. While the health benefits of resistant starch (RS) are well-documented, the role of RT-90 (a phosphate-modified tapioca RS containing 90.
