This work aimed to elucidate the deterioration mechanisms of shrimp surimi gels during refrigerated storage, and the regulatory mechanisms of epigallocatechin-3-gallate loaded cyclodextrin-based metal-organic framework (EGCG@CD-MOF) as a model antioxidant. Labele-free proteomics provided a quantitative analysis of the differential proteomic signatures of degraded proteins. Structural proteins, like myosin, paramyosin, titin, laminin, and α-actinin, along with calcium regulatory proteins, like calcineurin and sarcoplasmic calcium-binding protein were found to be highly susceptible to oxidative degradation during refrigeration.

Aquaculture organisms may accumulate metals to induce health risks. Compared with the focus on total contents, chemical-specific risk assessment makes reasonable but is rare. Herein, we elucidated occurrence of twelve metal compounds in shrimp and fish (edible muscle, one of major metal-containing and generally targeted organs), water, sediment, and feedstuff from two aquaculture ponds in Zhejiang Province (one of the major aquatic production and consumption areas).

Sensitive intelligent films can be used to accurately monitor food freshness. In this study, a cellulose acetate curcumin-loaded cyclodextrin (CD)-based metal-organic framework intelligent film (CA-Cur@CD-MOF) was developed to monitor shrimp freshness at different spoilage stages in real time. The mechanical, barrier, optical, and ammonia-sensitive properties of this film were studied.

To explore the mechanism of Virgibacillus proteases on hydrolysis of shrimp myofibrillar protein (SMP) and formation of volatile compounds, the fermented broth of Virgibacillus halodenitrificans was purified and the protease was identified as peptidase S8. The enzyme had optimum activity at pH 7.0-8.

Multi-species tests in bioassays offer a holistic view of the ecosystem's response to toxicity, as different species display varying sensitivities to pollutants. This research aimed to assess the ability of toxicity tests' to distinguish contamination levels, examine site-specific effects, and investigate seasonal variability. Using a multispecies approach (Nannochloropsis oceanica, Artemia franciscana, and Arbacia nigra), bioassays evaluated marine water quality from Callao Bay in Peru across four sampling areas (Naval School: PA1, Peruvian Marine Institute: PA2, Callao Pier: PA3, and San Lorenzo Island: PA4).
