Widely used antimicrobial volatile organic compounds, such as sulphur dioxide and ethanol but also selected aroma compounds such as carvacrol, allyl isothiocyanate (AITC) and cinnamaldehyde, were tested single and in binary combination for their effect on Penicillium notatum growth in vapour phase at 30 degrees C. Aroma compounds were more efficient compared to sulphur dioxide and ethanol. AITC and cinnamaldehyde had the highest inhibition activity on the growth of P. notatum with minimum inhibitory concentration (MIC) of 3.8 and 3.9 micromol/L of air, respectively. The impact of agents combined two by two was assessed using two criteria, the increase of growth delay and the reduction of growth rate. A synergistic activity was identified for six combinations; ethanol/carvacrol, sulphur dioxide/carvacrol, sulphur dioxide/AITC, sulphur dioxide/cinnamaldehyde, AITC/cinnamaldehyde and cinnamaldehyde/carvacrol. The advantage of these combinations is to reduce the concentration of each agent and their relative impact in organoleptic properties.

A key factor influencing consumer acceptance of soybean products is the aroma and taste profile, which can be modulated through fermentation using unique microbial strains. This study aimed to identify and characterize novel microbial strains with the potential to enhance flavour profiles including umami, while reducing undesirable flavour notes such as beany aromas. The results showed an 800% (8-fold) increase in free amino acids in samples fermented with , which correlated with an increase in umami intensity as measured using an E-tongue.

Background: One of the main sources of contaminated dairy products is moldy fungi, specifically species of Aspergillus and Penicillium. This study aimed to evaluate the effect of the alcoholic extract of Allium jesdianum plant on the growth of molds contaminating dairy products in Isfahan.
Materials And Methods: In this research, 200 samples of dairy products were gathered from different areas of Isfahan city, including 70 samples of cheese, 60 samples of buttermilk, 40 samples of yogurt, 20 samples of curd, and 10 samples of cream.
