Vacuoles isolated by a mechanical slicing method from developing tubers of Jerusalem artichoke (Helianthus tuberosus L.) contain activities of the two principal enzymes responsible for fructan synthesis: sucrose-sucrose fructosyl transferase and fructan-fructan fructosyl transferase. Both enzymes are associated with the vacuolar sap and not with the tonoplast. In vacuoles isolated from dormant tubers, the fructan-fructan fructosyl transferase activity remains in the vacuolar sap but the fructan exohydrolase activity is associated with the tonoplast. Fructan is hydrolysed by these vacuoles to fructose, which can be exported to the suspending medium. The localization of the enzymes of fructan metabolism in the vacuole has implications for the maintenance of fructan polymerisation.

This study explores the potential of vacuoles derived from Saccharomyces cerevisiae (S. cerevisiae) as a novel form of drug carrier, specifically focusing on their application in enhancing the delivery of the chemotherapeutic agent Daunorubicin (DNR). We isolated and reassembled these vacuoles, referred to as Reassembled Vacuoles (ReV), aiming to overcome the challenges of drug degradation caused by hydrolytic enzymes within traditional vacuoles.

The gene encodes carnitine-acylcarnitine translocase (CACT), facilitating the transport of long-chain acylcarnitine required for energy production via β-oxidation into the mitochondria. Alcoholic liver injury is one of the most frequent liver diseases around the world, and nutritional intervention has been considered as an effective way to alleviate alcohol liver injury. To alleviate the liver damage caused by alcohol, a type of astaxanthin (AXT) loaded nanoparticles were designed for dual targeting of hepatocytes and mitochondria. Firstly, galactooligosaccharides (GOS) were conjugated to whey protein isolate (WPI) and sea cucumber peptide (SCP) via the Maillard reaction, achieving a grafting degree of 29 %, then triphenylphosphonium (TPP) was linked by amide reaction.
