The effect of temperature on gluten conditioned at the following water contents, 0%, 13%, and 47% (wet weight basis), was studied by FTIR spectroscopy over the temperature range of 25-85 degrees C. A detailed discussion of the assignment of the amide I band is given. At 0% hydration no changes in the secondary structure with temperature could be detected; spectra were consistent with a tight disordered structure with many protein-protein interactions. At 13% hydration, distinctive changes occurred in the low-frequency region of the amide I band (1,630-1,613 cm(-1)). This was attributed to changes in the beta-sheet structure. On cooling to 25 degrees C, these changes were mainly reversed. It was noted that most of the changes observed occurred above the glass transition temperature. At 47% hydration, more complex changes took place: as the temperature was raised distinct bands at 1,630 and 1,613 cm(-1) merged. However, this process was partially reversed, with recovery of both bands, on cooling. The significance of these results in relation to other changes in gluten proteins in flour and dough with temperature and water content is discussed.

Given the inherent limitations in climate models, this study evaluates the performance of CORDEX Africa regional climate models to simulate precipitation and temperatures over the Melka-Wakena catchment. To accomplish this, the performance evaluation utilizes techniques such as multi-metric weighted ranking to select top-1 (best individual model), specific multi-model ensembles (top-N ensemble), multi-model ensemble, and average hybrid (top-N ensemble with MME) approaches at various temporal scales.

Trace measurement of aerosol chemical composition in workplace atmospheres requires the development of high-throughput aerosol collectors that are compact, hand-portable, and can be operated using personal pumps. We describe the design and characterization of a compact, high flow, Turbulent-mixing Condensation Aerosol-in-Liquid Concentrator (TCALC) that allows direct collection of aerosols as liquid suspensions, for off-line chemical, biological, or microscopy analysis. The TCALC unit, measuring approximately 12 × 16 × 18 cm, operates at an aerosol sample flowrate of up to 10 L min, using rapid mixing of a hot flow saturated with water vapor and a cold aerosol sample flow, thereby promoting condensational growth of aerosol particles.

Unlabelled: As observed by the Gravity Recovery and Climate Experiment (GRACE) and GRACE Follow On (GRACE-FO) missions, global terrestrial water storage (TWS), excluding ice sheets and glaciers, declined rapidly between May 2014 and March 2016. By 2023, it had not yet recovered, with the upper end of its range remaining 1 cm equivalent height of water below the upper end of the earlier range. Beginning with a record-setting drought in northeastern South America, a series of droughts on five continents helped to prevent global TWS from rebounding.
