The objectives of this study were to evaluate the fundamental properties of potato pulp and to explore its potential uses. Lactic acid bacteria were the dominant microbes in potato pulp over the season (maximum being 10(8)/g). The water content in potato pulp was approximately 80% in all season. Starch and fiber were the main components of potato pulp, amounting to 80% of the dried matter regardless of the season. The fermentation of potato pulp by Rhizopus oryzae progressed only in the potato pulp extracted at the end of the season. This indicated that the fermentation of potato pulp was influenced by the dates of extraction, and it was assumed that the quality of the components, such as pectin, varied with such dates.

This work aimed to explore safe techniques for the utilization of farmland surrounding mining areas contaminated with heavy metals-specifically cadmium (Cd) and lead (Pb)-in order to achieve food security in agricultural production. A potato variety (Qingshu 9) with high Cd and Pb accumulation was used as the test crop, and seven treatments were set up: control (CK), special potato fertilizer (T1), humic acid (T2), special potato fertilizer + humic acid (T3), biochar (T4), calcium magnesium phosphate fertilizer (T5), and biochar + calcium magnesium phosphate fertilizer (T6). The remediation effect of the combined application of different passivators on the accumulation of cadmium and lead in potatoes in the contaminated soil of a mining area was studied.

Carob pulp is a valuable source of cellulose-rich fraction (CRF) for many food applications. This study aimed to obtain and characterize a CRF derived from carob pulp waste after sugar removal and to evaluate its potential use in the 3D printing of cellulose-rich foods. Thus, the extraction of the CRF present in carob pulp (by obtaining the alcohol-insoluble residue) was carried out, accounting for nearly 45% dm (dry matter) of this byproduct.
