[chemical reaction: see text]. A simple and efficient method for rearranging 2,3-anhydro carbohydrates to unsaturated sugars has been developed. The exceptionally mild reaction conditions and high stereoselectivity should make this an attractive method for the preparation of unsaturated carbohydrate derivatives.

To explore the effect of oleic acid, linoleic acid, and linolenic acid on "glucose-glutathione" Maillard reaction initial stage and meaty flavor compounds formation pathways, glutathione-Amadori compound was synthesized, and identified by Q/TOF and NMR. Depending on the concentration of glutathione and glutathione-Amadori compound quantified by UPLC-MS/MS, the unsaturated C18 fat acids inhibited glutathione Amadori compound formation or accelerated degradation, and oleic acid inhibited most markedly. The results showed that 65 volatile compounds were detected by GC-MS-O in four model systems.

At present, there is no clear consensus on the impact of carbohydrate feeds on bee colony health, and comprehensive research and evaluation in this context is lacking. To comprehensively and objectively examine the health status of honeybees after consuming those carbohydrates from multiple perspectives, experimental techniques, including high-throughput sequencing of the transcriptome, proboscis extension reflex (PER), and measuring bee growth parameters were employed. This study showed that compared with honey, feeding high fructose syrup (HFS) resulted in a decrease in the survival rate and body weight of bees, while sucrose decreased the learning and memory ability of bees.

Chirality is a vital characteristic of molecules and crucial for biological functioning. Glycals are unsaturated chiral sugars that contain an enolic double bond within the ring structure and they introduce the chirality in the molecular scaffolds. Since their discovery and synthesis by Fischer and Zach in 1913, they have been used as a flexible chiral synthon for synthesising natural products and biologically significant molecules.

Purpose: As healthy eating recommendations shift to incorporate environmentally sustainable eating principles, it becomes crucial to understand whether children's dietary intakes align with global recommendations such as the EAT-Lancet Commission Planetary Health Diet (PHD), in addition to national health-promoting guidelines, including the Australian Dietary Guidelines (ADG). This cross-sectional study aimed to assess the alignment of young Australian children's food intakes with these recommendations.

Methods: Dietary data from the 2011-2012 National Nutrition and Physical Activity Survey for children aged 2-8 years were used and compared with, energy-adjusted target amounts of the PHD and ADG Foundation Diet.
