Molecular transport characterized by diffusion coefficients is a key feature of food processes and especially in dairy processes. Caseins represent 80% of the protein content in milk and are directly involved in the formation of dairy gels. Consequently, providing a quantitative description of the solute diffusion in casein gels should contribute significantly to rationalization of the dairy processes. The objectives of this study were to study the self-diffusion coefficient of molecular probes [polyethyleneglycol (PEGs)] in casein solutions and gels, in particular with regard to the effects of the probe molecular size and casein concentration. We have shown that the PEG diffusion was an efficient tool to reveal the structural information relative to the gel matrix structure.

Characterizing major bovine milk proteins, including whey and casein, is of significant interest in the dairy industry. The diverse array of protein proteoforms can be different in terms of genetic variation, breed ways, lactation stage, and animal nutritional status. Bacteriophages hold promise for combating pathogenic bacteria in the human intestinal tract, but their therapeutic potential is limited by harsh stomach conditions, including low pH and digestive enzymes. This study aimed to develop a natural protective mechanism for orally administering phages to treat gastric infections caused by Klebsiella aerogenes. Results revealed that free phages became inactive at pH 3 without protective measures.

Objectives: This study aims to comparatively assess the preventive and protective effects of the self-assembling peptide P-4 on enamel erosion and evaluate the potential for enamel surface recovery when professional products are combined with home-use dental-care products during the erosive process.
Materials And Methods: Ninety-nine bovine incisors were divided into nine groups: a control group, four groups with the application of professional-products [P-4 peptide (Curodont-Repair), stannous/Sn containing solution (8% Sn), casein-phosphopeptide-amorphous-calcium-phosphate fluoride/CPP-ACPF (MI Varnish), sodium fluoride/NaF (Profluorid)] and four groups with the combination of professional products and home-use daily dental care products [P-4 peptide (Curodont Repair + Curodont Protect), stannous ions containing agents (8% Sn+Emofluor Gel Intensive-Care), CPP-ACPF (MI Varnish + MI Paste Plus), NaF (Profluorid + ReminPro)]. Professional products were applied once before a five-day erosive cycle, involving six 2-minute citric-acid exposures per day.

This study aimed to develop a sustainable and bio-based nano-additive (sodium caseinate/cellulose nanofibers (SC/CNF) complex) to modulate liquid-based oil-in-water (O/W) colloid interfaces, which function as a fat control agent to slow lipid digestion. Edible protein (SC) was grafted onto CNF through facile electrostatic attraction, which reduces solvent and chemical usage for greener process. The physicochemical properties of SC/CNF showed that adding SC increased the interfacial bonding between CNF particles, resulting in higher interfacial pressure by forming dense and compact layers of SC/CNF.
