The effect of flavonoids of different structure (baikalein, baikalin, quercetin, dihydroquercetin, genistein, and daidzein) on the process of formation of lipid hydroperoxides during thermoinduced autooxidation of neutral lipids of animal origin. The minimum inhibitory concentration of isoflavones was found to be equal to 10(-3) M. Effective inhibitory concentration of other flavonoids (except baikalin) was equal to 10(-4) M. Baikalin was an effective promoter of lipid peroxidation. The antioxidant activity of the flavonoids tested was calculated taking ionol as a reference.

In this study, we developed a double-layer colon-targeted microcapsule. It used the Maillard product of gelatin-isomaltooligosaccharide (GI180) and zein-shellac complex (ZS) as bio-based materials, plant extracts (MPL) and Lactobacillus plantarum JJBYG12 (JJBYG12) were co-encapsulated, endowing them with strong resistance to harsh environments and precise intestinal adhesion and targeting ability. The research results indicated that ZS11 exhibits hydrogen bonding and electrostatic interactions.

Anthocyanin is the primary color-developing component in the pericarp of the passion fruit. Although the pericarp of the passion fruit is anticipated to be a significant source of anthocyanin, however, information regarding anthocyanin biosynthesis in the passion fruit pericarp remains unexplored. Based on metabolomics analysis, a total of five anthocyanins were identified in the purple-skinned passion fruit pericarp, among which three anthocyanins, petunidin-3-O-arabinoside, geranylgeranyl-3,5-O-diglucoside, and petunidin-3-O-rutinoside, play key roles in the coloration of the passion fruit pericarp.
