Experimental evidence is presented that the intrinsic viscosity of solutions of mixed proteins obeys the additive equation See PDF for Equation. The datum serves to characterize the system, and combined with other analytical techniques and fractionation procedures, enables one to analyze and characterize subfractions. The plasmas and sera of clinically "normal" individuals give intrinsic viscosity values agreeing with calculated values. The intrinsic viscosity values for pathological plasmas and sera in all cases are greater than normal and reflect the augmented levels of those proteins fibrinogen, alpha(2)-globulins, and gamma-globulins occurring in the pathological state. The method is readily adaptable to routine clinical use and furnishes a measure of the departure from normal of protein levels in serum and plasma.

This study explores the green extraction of phenolic antioxidants from fruit using choline-chloride-based deep eutectic solvents (DESs) as an eco-friendly alternative to conventional solvents. Sixteen DESs, prepared by combining choline chloride with various hydrogen bond donors, were characterized for their physical properties, including viscosity, polarity, and pH, and applied to extract phenolics from . High-performance liquid chromatography (HPLC) quantified key phenolic compounds, including neochlorogenic and chlorogenic acid, quercetin derivatives, and cyanidin derivatives, as well as total phenolic acids, flavanols, and anthocyanins.

Exploiting novel crosslinking chemistry, this study pioneers the use of waterborne polyurethane (WPU) to chemically crosslink porcine-derived gelatin, producing enhanced gelatin hydrogel films through a solvent-casting method. Our innovative approach harnesses the reactive isocyanate groups of WPU, coupling them effectively with gelatin's hydroxyl and primary amino groups to form robust urea and urethane linkages within the hydrogel matrix. This method not only preserves the intrinsic elasticity of polyurethane but also significantly augments the films' tensile strength and strain.

Effects of enzymolysis by seven proteases (Alcalase, Bromelain, Flavourzyme, Papain, Pepsin, Protamex, and Trypsin) with distinct cleavage specificities on the emulsification performance of hempseed protein (HPI) and its correlation with the structural and interfacial characteristics were explored in this study. Upon enzymolysis, a remarkable decrease in α-helix and β-turn was observed in resultant hydrolysates (HPH), accompanied by a rise in β-sheet and random coil, notably by Alcalase, Bromelain, Papain, and Trypsin.
