The kinetics of axial water substitution by cysteine in six different cobaloximes, viz.trans-RCo(Hdmg)(2)H(2)O, where Hdmg = dimethylglyoximate, R = cyclo-C(5)H(9) (c-P), CH(3)CH(2) (Et), CH(3) (Me), C(6)H(5)CH(2) (Bz), C(6)H(5) (Ph) and CF(3)CH(2), were studied as a function of cysteine concentration, temperature and pressure. It was found that cysteine substitutes the coordinated H(2)O molecule trans to the alkyl group with second order rate constants that follow the order of reactivity: c-P > Et > Bz > Me > Ph > CF(3)CH(2). Rate and activation parameters (Deltan H(++), Delta S(++) and Delta V(++)) enable the formulation of a reaction mechanism that can account for the substitution behaviour of the investigated alkylcobaloximes. In particular, a gradual mechanistic changeover from I(d) to I is observed along the series of R groups from c-P to CF(3)CH(2).

Residual nitrite (NO) and nitrate (NO) have been widely studied in the past few decades for their function to improve processed meat quality and their impact on human health. In this study we examined how the residual nitrite and nitrate (NO) content of major classes of processed meats products (n = 1132) produced locally from three regions (East Coast, Midwest and West Coast) and plant protein-based meat analogues (n = 53) available at retail in the United States was influenced by their composition, processing, and geographical attributes. We also conducted time-dependent depletion studies and observed different patterns of NO depletion and conversion during processing and storage and correlated them with product quality.

The ternary complex effectively prevents droplet aggregation, Ostwald ripening, and phase separation through its gel network, thereby demonstrating its capability in bioactive compound delivery. In this work, the influence of varying chickpea protein isolate (CPI) levels on the microstructure, gel characteristics, stability and functional properties of grape seed proanthocyanidin (GSP) and konjac gum (KGM) stabilized ternary complexes was investigated. Visual appearance indicated the formation of a non-stratified ternary complex as the CPI enhanced to 3-4 %.

Thio/selenoimidazole Nπ-methyltransferases are an emerging family of enzymes catalyzing the final step in the production of the S/Se-containing histidine-derived antioxidants ovothiol and ovoselenol. These enzymes, prevalent in prokaryotes, show minimal sequence similarity to other methyltransferases, and the structural determinants of their reactivities remain poorly understood. Herein, we report ligand-bound crystal structures of OvsM from the ovoselenol pathway as well as a member of a previously unknown clade of standalone ovothiol-biosynthetic Nπ-methyltransferases, which we have designated OvoM.

Mutation or deletion of the deubiquitinase USP7 causes Hao-Fountain syndrome (HAFOUS), which is characterized by speech delay, intellectual disability, and aggressive behavior and highlights important unknown roles of USP7 in the nervous system. Here, we conditionally delete USP7 in glutamatergic neurons in the mouse forebrain, triggering disease-relevant phenotypes, including sensorimotor deficits, impaired cognition, and aggressive behavior. Although USP7 deletion induces p53-dependent neuronal apoptosis, most behavioral abnormalities in USP7 conditional knockout mice persist following p53 loss.
