An ergonomic investigation of force exertions during pork shoulder deboning was conducted. Nine male workers volunteered to participate in the study. Three cycles of the shoulder deboning task were measured for each worker, using an instrumented knife that provided direct measurements of grip forces and cutting moments applied to the knife. The average grip force values during the task were between 11 and 35% of the maximum voluntary grip force. A key finding was that there is high between-subject variation in exposure to integrated grip forces and cutting moments, which can have implications for exposure to risk for upper extremity musculoskeletal disorders. There was also high between-subject variation in cutting time. Measures of knife sharpness indicated that there is also variation in knife maintenance among workers during a 5-hour period. The implications of the results for training and further study are discussed.

Objective: This study was conducted to enable on-line prediction of primal and commercial cut weights in Korean slaughter pigs by AutoFom III, which non-invasively scans pig carcasses early after slaughter using ultrasonic sensors.
Methods: A total of 162 Landrace, Yorkshire, and Duroc (LYD) pigs and 154 LYD pigs representing the yearly Korean slaughter distribution were included in the calibration and validation dataset, respectively. Partial least squares (PLS) models were developed for prediction of the weight of deboned shoulder blade, shoulder picnic, belly, loin, and ham.

A total of 862 lamb carcasses that were evaluated by both the VIAscan® and the current EUROP classification system were deboned and the actual yield was measured. The purpose of this ergonomic investigation is to establish a relationship between quality, productivity and risk of musculoskeletal disorder (MSD) in manual bone-removal process in the salmon fish industry. The method consists in a follow up study of 14 workers in a lane that processes salmon steak.
