The aim of this work is to assess the influence of light intensity (plants with direct sun exposure and in a controlled light intensity) and age of leaves (6-24 months) on the characteristics of the extracts of mate tea leaves obtained from carbon dioxide at high pressures. Samples of mate were collected in an experiment conducted under agronomic control at Industria e Comercio de Erva-Mate Barão LTDA, Brazil. The content of selected organic compounds of the extracts was evaluated by gas chromatography together with mass spectrometry. Quantitative analysis of caffeine, theobromine, phytol, vitamin E, squalene, and stigmasterol was performed, and the results showed that field variables exert a strong influence on the liquid yield and on the chemical distribution of the extracts.

In response to the rise of Non-communicable Diseases, public policies, such as Front-of-package (FOP) nutrition labeling, have been implemented to clarify information on food labels and promote healthier eating habits. Brazil adopted black magnifier warning label in 2020, which consists of a black rectangle with a magnifier glass followed by the expression "High in" for three critical nutrients: added sugar, saturated fat and/or sodium. Yerba mate is a source of many desirable substances, but it may also contain toxic metals and other substances that are harmful to health. Monomeric flavan-3-ols and their oligomeric forms, proanthocyanidins (PAs), are closely related to the bitterness of tea beverages. Monomeric flavan-3-ols are characteristic flavor compounds in tea. Increasing the content of PAs and anthocyanins enhances the resistance of tea plants to pathogen invasion but decreases the quality of tea beverages.
