Milk is a nutrient-rich liquid produced by mammals, offering various health benefits due to its composition of proteins, fats, carbohydrates, vitamins, and minerals. Beyond traditional nutritional aspects, recent research has focused on extracellular vesicles (EVs) found in milk and their potential health benefits, especially for gastrointestinal (GI) health. Milk-derived EVs have been shown to influence gut microbiota, promote gut barrier integrity, support tissue repair and regeneration, modulate immune responses, and potentially aid in managing conditions like inflammatory bowel disease (IBD) and colorectal cancer.

The encapsulation of curcumin in the emulsions has attracted much attention in functional food development. Herein, the fish oil-loaded silver carp scale gelatin-stabilized emulsions with vitamins were explored for the delivery of curcumin. The curcumin encapsulation had no obvious effect on the formation, storage stability, lipid oxidation, and in vitro droplet digestion behaviors of the emulsions.

In order to improve the preservation of red grape fruits, 'Chuju' polysaccharides (CCP) were cross-linked with chitosan (CS) to create CCP/CS composites with varying ratios. These composites were comprehensively characterized using FT-IR, C NMR, and SEM, which confirmed a smooth film surface and a uniform distribution of CCP. The composite films demonstrated efficacy in maintaining the quality of red grapes by mitigating shriveling and significantly reducing firmness loss by 22.
