There is a growing interest in natural preservatives driven by consumer demand for clean-label products. In Canada, approximately 48 million liters of blood are produced annually during chicken slaughter, offering an opportunity to valorize cruor, the solid blood component rich in hemoglobin, for use in food preservation. This study investigated the hydrolysis of chicken cruor with pepsin at pH 2, 3, 4, and 5 for 180 min to produce antimicrobial peptides.

Hesperidin exhibits promising potential as a feed additive for augmenting gastric acid secretion in animals. Gastrointestinal function is essential for animal growth and the efficient digestion of dietary nutrients, with gastric acid secretion serving as one of its critical components. The secretion of gastric acid, together with other digestive fluids and substances, significantly influences the digestion and absorption of animal feed, which in turn affects growth performance.

Marine collagen is gaining more attraction than terrestrial collagen because it is free of zoonotic disease and religious constrain. In this study, we aimed to investigate and compare the physicochemical properties and functional characteristics of acid-soluble collagen (ASC-MF) and pepsin-soluble collagen (PSC-MF) extracted from scales of Megalonibea fusca.
