Article Synopsis
  • Tarhana is a traditional fermented food known for its nutritional benefits and shelf life, and this study explored how adding pea protein isolate (PPI) affects its properties.
  • As the amount of PPI increased in tarhana, the protein content rose significantly, reaching over 76% in the highest PPI formulation, and also increased the antioxidant capacity and key polyphenols.
  • The study found that PPI not only improved the digestibility of the protein and lowered the glycemic index of tarhana, making it healthier, but also showed potential for enhancing the nutritional profile of this traditional food.

The Potential of an Artificially Ultraviolet B Irradiated Hay as a Source of Vitamin D.

J Anim Physiol Anim Nutr (Berl)

January 2025

Department of Equine and Small Animal Medicine, Faculty of Veterinary Medicine, University of Helsinki, Helsinki, Finland.

Article Synopsis
  • Roughage in herbivore diets can be an important source of vitamin D, with levels varying based on factors like plant species, maturity, and UVB exposure.
  • UVB light promotes the conversion of provitamin D to vitamin D, which significantly impacts vitamin D content in forages.
  • In a study, ergocalciferol levels in roughage increased significantly with UVB exposure, highlighting the potential of hay as a valuable vitamin D source for herbivores and emphasizing the need to consider UVB's effects in both practical and research contexts.

The Effect of Cellulose Nanocrystals on the Molecular Organization, Thermomechanical, and Shape Memory Properties of Gelatin-Matrix Composite Films.

Gels

November 2024

Biopolymer Research & Engineering Laboratory (BIOPREL), Escuela de Nutrición y Dietética, Facultad de Medicina, Universidad de Los Andes, Santiago 7550000, Chile.

Gelatin is a natural hydrocolloid with excellent film-forming properties, high processability, and tremendous potential in the field of edible coatings and food packaging. However, its reinforcing by materials such as cellulose nanocrystals (CNC) is often necessary to improve its mechanical behavior, including shape memory properties. Since the interaction between these polymers is complex and its mechanism still remains unclear, this work aimed to study the effect of low concentrations of CNC (2, 6, and 10 weight%) on the molecular organization, thermomechanical, and shape memory properties in mammalian gelatin-based composite films at low moisture content (~10 weight% dry base).

Currently for engineered nanomaterials (ENMs), there are no alternatives to bioaccumulation testing in fish as prescribed by OECD TG 305. New approaches are being sought, in order to reduce the numbers of animals used and address the ethical concerns associated with the use of vertebrates in such testing. This study aimed to demonstrate the value of an alternative method - the digestibility assay - as a tool to assess the bioaccumulation potential of ENMs.

The clinical phenotype of isolated ocular or oral dryness in Sjögren's disease.

Clin Exp Rheumatol

December 2024

Pathophysiology Department, Athens School of Medicine, National and Kapodistrian University of Athens; Research Institute for Systemic Autoimmune Diseases, Athens; and Laboratory of Immunobiology, Center for Clinical, Experimental Surgery and Translational Research, Biomedical Research Foundation of the Academy of Athens, Greece.

Objectives: To assess if isolated mouth or eye dryness constitutes distinct clinical phenotypes in Sjögren's disease (SjD).

Methods: We analysed 1765 patients meeting the 2016 ACR-EULAR SjD criteria, followed up at four centres in Greece and Italy (Universities of Pisa, Italy, and Athens, Harokopion, and Ioannina, Greece). Patients with isolated mouth or eye dryness were identified and matched 1:2 with those experiencing both symptoms, according to age at SjD diagnosis, gender, and disease duration.
