Mental stress is a known risk factor for lifestyle-related diseases. Previously, we reported that short-term stress sharpens the sense of taste and dulls the sense of pungency, but in this study, we examined the effects of chronic mental stress on taste and pungency by comparing normal days with end-of-semester examination days. Furthermore, the relationship between pungency measured on the tongue and the corresponding skin current value causing forearm pain was investigated.

Currently, lipid/polymer membranes are used in taste sensors to quantify food taste. This research aims to improve sweetness sensors by more selectively detecting uncharged sweetening substances, which have difficulty obtaining a potentiometric response. Lipid/polymer membranes with varying amounts of tetradodecylammonium bromide (TDAB) and 1,2,4-benzene tricarboxylic acid (trimellitic acid) were prepared.

In the western Henan agricultural area, Duhu (Dupo♂ × Hu sheep♀) hybrid lambs are the primary breed of local meat sheep, predominantly raised in large-scale indoor feeding systems, although many farmers still rely on grazing. However, limited research exists on the meat quality of Duhu lambs under both grazing and indoor feeding systems. This study examined how grazing and indoor feeding affect the nutritional quality, flavor, amino acid profile, and fatty acid composition of 7-month-old Duhu lamb meat.
