As a widely consumed, nutritious, and affordable food, eggs and their derivatives' impacts on obesity remain inconclusive. In this study, we aimed to determine the association between egg and egg-derived cholesterol consumption, and their change trajectories, with obesity among Chinese adults. : Longitudinal data collected by the China Health and Nutrition Survey from 1997 to 2015 were analyzed.

In this study, blueberry pomace polysaccharide (BPP) gels were constructed using calcium ions (Ca) induction. The effects of different Ca concentrations on the relaxation time, texture, water holding capacity, thermal stability, rheological behaviour and micromorphology of Ca-BPP gels were evaluated. The Ca concentration required for optimum gel performance was 15 mmol/L.

As the extension of the egg-laying cycle, heightened energy and lipid metabolism cause excessive lipid accumulation, resulting in rapid decline in laying performance during the late laying period. Bile acids (BAs), synthesized from cholesterol in the liver, are potent metabolic and immune signaling molecules involved in lipid metabolism and the regulation of energy homeostasis. However, under different dietary protein levels, the role of BAs on hepatic lipid metabolism of laying hens at the late phase remains unclear.
