Published: March 2003

Paeonins A and B, new monoterpene galactosides have been isolated from the chloroform-soluble fraction of the roots of Paeonia emodi and showed potent lipoxygenase inhibitory activity. The structures of 1 and 2 have been assigned on the basis of spectral analysis including one- and two-dimensional NMR techniques.

In order to protect the anthocyanins in blueberries during low-temperature storage, TMs/KGM/LAG (TKL) coatings were developed by composite thymol/β-cyclodextrin (β-CD) microcapsules (TMs), konjac glucomannan (KGM), and low acyl gellan gum (LAG). The results showed that the TMs prolonged the release of thymol for at least 30 d. The TKL was effective in maintaining the color of blueberry skin by regulating the activities of key enzymes for anthocyanin synthesis and degradation.

Galactooligosaccharides (GOS), as mimics of human milk oligosaccharides, are important prebiotics for modulating the ecological balance of intestinal microbiota. A novel carrier-free cell immobilization method was established using genipin to cross-link Kluyveromyces lactis CGMCC 2.1494, which produced β-galactosidase, an enzyme essential for GOS synthesis.

: Berry fruits are recognized as a "superfood" due to their high content of bioactive compounds and health benefits. : Herein, extracts of and fresh and dried fruits obtained by different extraction procedures (ethanolic and hydroalcoholic maceration, ultrasound-assisted extraction, and Soxhlet apparatus) were analysed using liquid chromatography-electrospray ionization-quadrupole-time of flight-mass spectrometry (LC-ESI-QTOF-MS) and compared to identify the main healthy compounds and their impact on the inhibition of key enzymes (pancreatic lipase, α-glucosidase, and α-amylase) associated with metabolic disorders. The antioxidant activity and inhibition of nitric oxide (NO) and NF-κB pathway were also investigated.
