Profetas (Protein Foods, Environment, Technology and Society) is a Dutch trans-disciplinary research programme, aiming to develop more sustainable food systems. The central theme of the programme is the question: is a transition feasible from a diet based primarily on animal proteins to a diet based for a large part on new food products made from plant proteins? In the programme this question is studied from very different disciplinary perspectives. In the programme a consumer and chain oriented approach is adopted. In the experimental part of the programme, pea proteins are studied. Profetas is funded by the Netherlands Organisation for Scientific Research, with support from the Ministry of Agriculture, Nature management and Fisheries and the food industry. The programme compromises 16 PhD and post-doctoral projects.

A gene within a single subclade of NCED genes is triggered in response to both, short- and long-term dehydration treatments, in three model dicot species. During dehydration, some plants can rapidly synthesise the stress hormone abscisic acid (ABA) in leaves within 20 min, triggering the closure of stomata and limiting further water loss. This response is associated with significant transcriptional upregulation of Nine-cis-Epoxycarotenoid Dioxygenase (NCED) genes, which encode the enzyme considered to be rate-limiting in ABA biosynthesis.

Rhizobia and legumes form a symbiotic relationship resulting in the formation of root structures known as nodules, where bacteria fix nitrogen. Legumes release flavonoids that are detected by the rhizobial nodulation (Nod) protein NodD, initiating the transcriptional activation of nod genes and subsequent synthesis of Nod Factors (NFs). This study aims to develop rapid and non-invasive methods based on near-infrared hyperspectral imaging and chemometrics for quantitative prediction of chemical compositions of pea-derived products. Hyperspectral imaging was used to acquire images from pea processing streams, namely pea flour, pea protein concentrate, and pea protein isolate. The PLS algorithm was used to develop quantitative prediction models based on the relationship between the hyperspectral image data and the chemical compositions of the pea products, including moisture, protein, ash, insoluble fiber, and total starch.

This study evaluated the properties of lentil protein, pea protein, quinoa protein, and soy protein as natural nanoparticle stabilizers and their interactions with pectin and chitin nanofiber in preparing high internal phase Pickering emulsions (HIPPEs). The globular plant proteins interact with polysaccharides through hydrogen bonding and electrostatic interactions, transforming the structure into complex morphologies, including fibrous and elliptical shapes. These complex nanoparticles exhibited enhanced thermal decomposition stability, and the HIPPEs constructed by them demonstrated significantly improved apparent viscosity and elastic modulus, with a yield stress of 931.
