The immunostimulating activity of saponin-containing extract of Saponaria officinalis has been studied. Use of an S. officinalis extract in a concentration close to the critical concentration of saponin micella formation increased the immunogenicity of viral glycoproteins. The immunogenicity of glycoprotein complexes with S. officinalis was higher than the immunogenicity of intact virus and micellae of purified glycoproteins and was comparable to that of glycoprotein complexes with Quil A glycoside.

Introduction: Traditional Chinese medicine (TCM) revolves around complex mixtures bound to specific roles within the formulation, among which saponin-containing plants with alleged properties of harmonising or detoxifying other compounds present in the preparations.

Objective: This article deals with the study of these interactions with, as a model, the interaction between saponins and selected active principles.

Methods: The measurement of the partition coefficient between water and octanol (logP) was used as an indicator and determined by nuclear magnetic resonance (NMR) for these active principles in the presence of saponins.

Aqueous Extract of root (AE) exhibited remarkable foaming profile, emulsification properties and antifungal activity due to the presence of high concentration of total saponins. Total phenolic compounds, another main component, accounted for the AE antioxidant activity. Spray drying of AE, as a thermal process, did not affect the foaming indices of Spray-dried Extract (SE) and is a recommended alternate for convenient application in food industry.
