Lactic acid bacteria such as Lactococcus lactis are the microorganisms of choice for performing metabolic engineering in relation to food fermentation. These bacteria are used extensively in food fermentations, they have a simple and therefore controllable metabolism and the molecular genetics of these food bacteria is well-developed. There have been recent successes in metabolic engineering in these lactic acid bacteria, including examples of changes in both primary metabolism (diacetyl and alanine) and secondary metabolism (exopolysaccharides and flavour).

This study explores the therapeutic potential of ω-3 algal oil (rich in DHA) and ω-7 sea buckthorn oil (rich in palmitoleic acid) in addressing hyperlipidemia and associated metabolic disorders. These oils regulate lipid metabolism through the PPARγ-LXRα-ABCA1/ABCG1 signaling pathway, reducing cholesterol accumulation, oxidative stress, and inflammation. In high-fat diet-induced hyperlipidemic mice, supplementation with these oils significantly improved lipid profiles, alleviated hepatic steatosis, and promoted cardiovascular health.

The gold standard to assess the aerobic capacity in physically active subjects and athletes is the maximal oxygen consumption test (VO2-max), which involves analysis of exhaled-gases and cardiorespiratory variables obtained via the breath-by-breath method in an ergospirometer during an incremental exercise. However, this method cannot elucidate metabolic changes at the muscular level. Near-infrared spectroscopy (NIRS) has emerged as a valuable technology to evaluate local oxygen levels (Tissular Saturation Index, TSI) by quantifying the concentrations of oxygenated (O2-Hb) and deoxygenated (H-Hb) hemoglobin in the microvasculature of tissues.
