Background: Crocetin is a multifunctional apocarotenoid natural product derived from saffron, holding significant promises for protection against various diseases and other nutritional applications. Historically, crocetin has been extracted from saffron stigmas, but this method is hindered by the limited availability of high-quality raw materials and complex extraction processes. To overcome these challenges, metabolic engineering and synthetic biology can be applied to the sustainable production of crocetin.

Honey is a complex natural nutrient with well-established therapeutic properties recognized in traditional medicine. The purpose of the current work was to compare, in vitro, the bioactive compounds, antioxidants, and antimicrobial properties of 37 honey samples collected from the western region of Algeria and to identify the best sample for potential therapeutic purposes. Estimation of bioactive compounds was carried out by determining the total phenolic and flavonoid contents.

Paprika, obtained from dried red pepper (), is valued for its characteristic colour and flavour. Its carotenoid content, which is important for both sensory and nutritional quality, varies depending on several factors (agronomic conditions and technological treatment with special attention to the drying methods) that influence the colour and antioxidant capacity of the samples. This study investigated the effect of an accelerated thermal treatment (80 °C for 8 h) applied to evaluate the oxidative stability of the carotenoids and the colour of ground paprika depending on its origin (Peru or China).
