The nutritional value and functional properties of flaxseed Linum Usitatissimum L. are analyzed. There are three groups of compounds in the flaxseeds, characterized by specific biological activity and functional properties: PUFA omega-3 family, soluble dietary fiber in the form of mucus, and lignans, which have phytoestrogen properties.

The analysis of experimental, clinical and epidemiological data on the phytoestrogen properties of the components of flaxseed Linum Usitatissimum L., especially lignans and products of their biotransformation in humans and animals enterodiol (END) and enterolactone (ENL) are presented. Flaxseed is the richest in the vegetable world source of lignans (up to 0,7-1,5% of dry weight of seed), among which prevails secoisolariciresinol diglycoside (SIR-DG).

Biorhythms with higher levels of activity of sorbitol dehydrogenase and lactate dehydrogenase in blood plasma, specific activity of sorbitol dehydrogenase, lactate dehydrogenase, and malate dehydrogenase in the liver, and body weight of rats were more pronounced in the spring-summer period than in the autumn-winter period. These specific features were revealed in animals feeding a normal diet or food with 54 and 27% sugar substitute sorbitol. However, specific activity of glucose-6-phosphate dehydrogenase in the liver was higher in the autumn-winter period.

Four groups of 1-month-old rats were fed with standard diet (SD) for a month, 46% SD + 54% sorbitol, 54% saccharose or 27% sorbitol + 27% saccharose. Fed with 54% sorbitol and with 27% sorbitol + 27% saccharose differed from rats given 54% saccharose and 100% SD (they were thin, had hyperreaction to light, diarrhea). Liver mass in all the tests in autumn and winter (AuWi) is lower than in spring and summer (SpSu).

One-month rats were randomized to a diet containing sorbitol (SOR) (54%), saccharose (SACCH) (54%) or that containing SOR (27%) and SACCH (27%). They were kept on the diets for 1 or 3 months. At the age of 2 and 4 months, the rats were returned to the routine diet of a vivarium.

In rats, starting from a month or three-months age, stayed for 2 months on a diet with 54 per cent of saccharose in the saliva the activity of hexokinase, aldolase, malate-dehydrogenase, sorbitol-dehydrogenase, glutamate-dehydrogenase, glucose-6-phosphate-dehydrogenase and the content of lactate, pyruvate and glucose were determined. In the activity of significant differences of enzymes and carbohydrate metabolites in the saliva of three- and five-months old rats were not disclosed. Keeping of the one-month rats for 2 months on the saccharose diet increased the activity of enzymes (except for malate-dehydrogenase) and raised the amount of lactate and pyruvate.
