Article Synopsis
  • The study used molecular dynamics simulation and Raman spectroscopy to analyze how heat treatment affects the structural changes in myofibrillar protein microgels (MPM) at an oil-water interface.
  • It was found that altering the oil ratio significantly impacted the transformation of disulfide bonds in the protein, exposing certain amino acid residues that enhance interactions with the oil phase.
  • The results showed that a stable high internal phase emulsion (HIPE) containing 3.0 wt% MPM and 0.75 oil could achieve over 70% thixotropic recovery and the highest elastic modulus (822.14 Pa), highlighting its potential application in the food industry.

Article Synopsis
  • - The study explored how defatted coconut flour (DCF)-based oleogels improve the quality of surimi, revealing DCF's dietary fiber forms the core structure of the oleogels network.
  • - Oleogels showed impressive oil binding of 96.95% and enhanced mechanical properties due to hydrogen bonds between DCF and corn oil.
  • - Integrating oleogels into silver carp surimi resulted in stronger gel strength and better texture, with a 5.0% DCF concentration boosting lipid content and overall nutrition of the surimi products.

A new nitrogen analog of 3,4-ethylenedioxythiophene (EDOT), N-methyl-3,4-dihydrothieno[3,4-b][1,4]oxazine (MDTO), was electropolymerized in different solvents (deionized water, acetonitrile, and propylene carbonate) using LiClO4 as the electrolyte. The structure and performance of as-prepared PMDTO polymers were systematically studied by cyclic voltammetry, UV-vis spectroscopy, FT-IR, SEM, thermogravimetry, spectroelectrochemistry and electrochromic techniques. To our surprise, solvents had a major influence on the electropolymerization of MDTO and properties of the resultant polymers, including morphology, electrochemistry, electronic and optical properties, and electrochromics, etc.
