Single-atom catalysts for electrochemical applications.

The field of small molecule electro-activated conversion is becoming a new star in modern catalytic research toward the carbon-neutral future. The advent of single-atom catalysts (SACs) is expected to greatly accelerate the kinetics of electrocatalytic reactions such as the hydrogen evolution reaction (HER), oxygen evolution reaction (OER), oxygen reduction reaction (ORR), hydrogen oxidation reaction (HOR), , owing to their maximum atomic efficiency, unique quantized energy level structure and strong interaction between well-defined active sites and supports. In this feature article, our group's proposed synthesis methodology applied in electrocatalysis is mainly summarized.

Double network oleogels co-stabilized by hydroxypropyl methylcellulose and monoglyceride crystals: Baking applications.

Edible double network oleogels were prepared by hydroxypropyl methylcellulose (HPMC) and glyceryl monostearate (GMS) by the cryogel-templated method. Hot GMS soybean oil solutions were absorbed by HPMC cryogels, which were further homogenized and cooled to form oleogels containing both the HPMC network and GMS network. The crystal network constructed by GMS crystal clusters significantly enhanced the mechanical and rheological attributes of oleogels.

Advances in the application of chitosan as a sustainable bioactive material in food preservation.

Chitosan is obtained from chitin and considered to be one of the most abundant natural polysaccharides. Due to its functional activity, chitosan has received intense and growing interest in terms of applications for food preservation over the last half-century. Compared with earlier studies, recent research has increasingly focused on the exploration of preservation mechanism as well as the targeted inhibition with higher efficiency, which is fueled by availability of more active composite ingredients and integration of more technologies, and gradually perceived as "chitosan-based biofilm preservation.
