The microbiota of cheese plays a critical role in determining its organoleptic and other physicochemical properties. Thus, assessing the composition of the cheese microbiota community would help promote the growth of desirable taxa and ultimately to optimize flavor, quality and safety. Here we measured microbial diversity, microbiota composition, short-chain fatty acids, and free amino acids in two traditional cheese-making strategies, Rushan and Rubing, processed in parallel from Lijiang, Eryuan, and Dengchuan of Yunnan province, China.

In this study, three types of enzyme (cellulase, glucose oxidase and catalase) were successfully immobilized on a reversible soluble Eudragit L-100. Through the determination of the preparation conditions, enzymatic properties and catalytic conditions, the co-immobilized enzyme was applied to the catalytic reaction of one-pot conversion of corn straw to gluconic acid.

A thermostable β-glucosidase from Thermotoga naphthophila RUK-10 was found to possess catalytic activity for cellobiose hydrolysis with a high potential for application in biomass conversion. The aggregation of cellobiose often has an inhibitory effect on cellobiohydrolases and endoglucanases during cellulose hydrolysis.
