[Physiological and biochemical properties of the bacterium Erwinia rhapontici, a producer of isomaltulose synthase].

Optimum conditions for the biosynthesis of isomaltulose synthase by submerged cultures of the bacterium Erwinia rhapontici, grown in the presence of 10% sucrose, have been determined (temperature of culturing, 30 degrees C; initial pH level, 7.5; duration of culturing, 54 h). The electrophoretically homogeneous preparation of the enzyme, thus obtained, had a specific activity of 210 U/mg protein.
