During storage and transportation, the reduction of microbial contamination and management of the exudation of fluids from the fish can effectively mitigate spoilage and degradation of fish fillets. In this work, the coaxial electrospinning films loaded with natural plant preservatives, namely laurel essential oil (LEO) and clove essential oil (CEO), were prepared by the coaxial electrospinning method synergistic with nanoemulsion techniques, and the hydrophilic preservation pads were prepared. The morphology of the film fiber is clear, without beads or damage, with fiber diameters falling within the 230-260 nm range.

Acid phosphatase (ACP) is a key enzyme that hydrolyzes inosinic acid. The mechanisms underlying the interaction between rosmarinic acid (RA) and ACP and the inhibition of the enzyme were investigated using inhibition kinetics, UV-visible and fluorescence spectroscopy, circular dichroism, and molecular docking. The results showed that RA was a reversible inhibitor of ACP and that the inhibition mechanism was uncompetitive.

The iTRAQ-based quantitative proteomic strategy was used to reveal the effects of magnetic nanoparticles plus microwave thawing (MNPMT) on the largemouth bass fillets quality. A total number of 47 proteins were identified as differentially abundant proteins (DAPs) in fillets treated by microwave thawing (MT), while 13 DAPs were in MNPMT. Bioinformatics analysis of Gene ontology (GO) enrichment, Kyoto encyclopedia of genes and genomes (KEGG) pathway enrichment, Protein-protein interaction (PPI) and subcellular localization prediction of DAPs showed that many DAPs were involved in protein structure, metabolic enzymes, protein turnover and so on.
