Climate change and food security issues have increased the demand for effective and sustainable technologies in the food and agriculture sectors. Plasma-activated water (PAW), a novel cleaning and disinfecting agent enriched with reactive oxygen species and reactive nitrogen species, has attracted widespread attention due to its potential application in maintaining microbiological safety and other quality parameters of food products. Compared to traditional disinfection methods, PAW is rapid and effective for various products, unrestricted by the volume or shape of the treated sample, and is green and sustainable.

The detailed mechanisms of Ni-catalyzed reductive arylalkylation of unactivated alkenes with aryl bromides to synthesize benzene-fused 5- and 6- cyclic compounds were systematically investigated by DFT calculations. Our finding reveals that, under the catalysis of a Ni/biOx system with Zn as a reductant, bromobenzene containing a terminal olefin unit preferentially undergoes traditional Heck cyclization and cross-coupling reactions, favoring the formation of 5- cyclization products. In contrast, when Zn is absent, Ni-alkyl species play a pivotal role, facilitating a rare 1,2-aryl migration followed by H-atom abstration, which selectively yields 6- cyclization products.

Dysregulated activation of the interleukin-21 (IL-21)/IL-21 receptor (IL-21R) signaling pathway is strongly associated with inflammatory and autoimmune disorders, which positions the pathway as a promising therapeutic target. Given the current lack of approved inhibitors or monoclonal antibodies targeting IL-21/IL-21R, we employed a structure-based virtual screening strategy coupled with experimental validation to identify potential IL-21 antagonists from a library of marine natural products provided by TargetMol. Here, we report the facile synthesis of imidazole-linked porous organic cages (IPOCs) via an in situ cyclization reaction protocol. Specifically, three IPOCs with [2+4] lantern-like structures and one with a [3+6] triangular prism structure were successfully prepared through condensation reactions between tetraformyl-functionalized calix[4]arene and bis(o-phenylenediamine) monomers in a single pot. This study investigated the impact of germination on quinoa protein (QP) composition, techno-functional properties, and the release of antioxidant peptides during gastrointestinal digestion. Germinated QP (GQP) at 36 and 48 h showed significant degradation of storage proteins. GQP12 and GQP24 exhibited increased surface hydrophobicity but decreased solubility, foaming, and emulsifying properties, while that of GQP60 and GQP72 were improved.
