Acrylamide (AA) and bisphenol A (BPA) are two kinds of pollutants with different structures and polarities. AA found in fried and toasted starchy foods can cause developmental and reproductive toxicity and BPA has neuro-, immuno- and developmental toxicities. The interactions between bisphenol A (BPA)/acrylamide (AA) and bovine serum albumin (BSA)/deoxyribonucleic acid (DNA) was investigated by the equilibrium dialysis, fluorophotometry, isothermal titration calorimetry (ITC) and circular dichroism (CD). Although much work has been done, the toxigenicity of PFCs remains largely unknown.
