In our previous work, wheat gluten (WG) has been modified by pH-shifting treatment combined with heat to improve solubility and emulsibility. In this study, the high-soluble modified wheat gluten (M-WG) as an emulsifier in ice cream was investigated. Compared to monoglycerides (MG) and soy protein isolates (SPI), the ice cream emulsion prepared with M-WG exhibited smaller droplet sizes and a more consistent dispersion.

Genome editing has the potential to improve growth and traits of aquatic animals. Assessment of the feeding habits of the genetically modified farmed fish is necessary, as this is closely related to the assessment of their growth performance, which is one of the most important economic traits. Previously, we developed a novel strategy to produce all-female (AF) common carp (+/-;XX genotype) with genome editing, which exhibited a growth advantage compared to the control carp (including control male and female carp).

Article Synopsis
  • - The study shows that lactic acid fermentation significantly enhances the flavor of egg whites, primarily through the action of Streptococcus thermophilus, one of the lactic acid bacteria tested.
  • - Researchers used advanced techniques like gas chromatography-mass spectrometry to analyze the metabolic changes, which revealed that amino acid breakdown is key to producing aromatic compounds that improve flavor.
  • - The findings underscore the role of specific enzymes in protein breakdown and amino acid synthesis, offering a foundation for future research on manipulating egg white flavor.

Distribution of risk factors for cardiovascular diseases has been changing globally, which may account for the discrepant temporal trends of ischemic heart disease (IHD) and stroke. To test the hypothesis and identify potential contributing factors, we designed an ecological study based on the GDB-2019 data and extracted age-standardized incidence rates (ASIRs) of IHD and stroke, and summary exposure values (SEVs) of 87 attributable factors. A declining trend was observed for ASIRs of stroke (globally from 181.

The balance of gut microbiota affects uric acid synthesis and excretion, influencing the development of hyperuricemia. This study aimed to investigate the effects and mechanisms of probiotics on hyperuricemia and adenine- and potassium oxonate-induced colonic damage. After two months of gavage at 10 CFU/day, the probiotic strains UA260 and YU28, identified through screening, significantly reduced serum uric acid levels in hyperuricemia mice from 109.

Article Synopsis
  • The electrochemical reduction of nitrate to ammonia (NORR) presents a more sustainable alternative to traditional ammonia production methods, prompting significant research into efficient electrocatalysts.
  • Molecular electrocatalysts, particularly Cu-based ones, show great potential for NORR but face challenges like complex synthesis, use of harmful solvents, and stability issues.
  • A new, simpler method was developed to create Cu-ATU and Ni-ATU electrocatalysts, with Cu-ATU demonstrating exceptional performance in ammonia production, thus advancing the field and aligning with industrial needs.

Bioactive food ingredients contribute to the promotion and maintenance of human health and wellbeing. However, these functional ingredients often exhibit low biopotency after food processing or gastrointestinal transit. Well-designed oral delivery systems can increase the ability of bioactive food ingredients to resist harsh environments inside and outside the human body, as well as allow for controlled or triggered release of bioactives to specific sites in the gastrointestinal tract or other tissues and organs.

Background: Endothelial dysfunction is a complication of diabetes mellitus (DM), characterized by impaired endothelial function in both microvessels and macrovessels, closely linked to atherosclerosis (AS). Endothelial dysfunction, characterized by impaired endothelial cell (EC) function, is a pivotal factor in AS and DM. Circular RNAs (circRNAs) are endogenous non-coding RNAs that can act as competing endogenous RNAs (ceRNAs) and regulate gene expression.

Inhibitors of α-amylase have been developed to regulate postprandial blood glucose fluctuation. The enzyme inhibition arises from direct or indirect inhibitor-enzyme interactions, depending on inhibitor structures. However, an ignored factor, substrate, may also influence or even decide the enzyme inhibition.

Cardiovascular disease is the predominant cause of mortality on a global scale. Research indicates that women exhibit a greater likelihood of presenting with non-obstructive coronary artery disease (CAD) when experiencing symptoms of myocardial ischemia in comparison to men. Additionally, women tend to experience a higher burden of symptoms relative to men, and despite the presence of ischemic heart disease, they are frequently reassured erroneously due to the absence of obstructive CAD.

Paroxysmal atrial fibrillation is a common arrhythmia, and its development process and prediction of the degree of atrial fibrosis are of great significance for treatment and management. Optical imaging technology provides a new means for non-invasive observation of atrial electrical activity. The aim of this study is to investigate the predictive effect of sinus node recovery time on the degree of atrial fibrosis in patients with paroxysmal atrial fibrillation, and to provide a basis for the application of optical imaging technology in the study of atrial fibrosis.

Background: Curcumin is widely known for its antioxidant and anti-inflammatory properties, but its mechanism of action in mitigating oxidative stress injury in brain vascular endothelial cells remains unclear. Due to the poor bioavailability of curcumin, it is challenging to achieve effective concentrations at the target sites. Nano-micelles are known for their ability to improve the solubility, stability, and bioavailability of hydrophobic compounds like curcumin.

This study aims to investigate the effects of interfacial layer composition and structure on the formation, physicochemical properties and stability of Pickering emulsions. Interfacial layers were formed using pea protein isolate (PPI), PPI microgel particles (PPIMP), a mixture of PPIMP and sodium alginate (PPIMP-SA), or PPIMP-SA conjugate. The encapsulation and protective effects on different hydrophobic bioactives were then evaluated within these Pickering emulsions.

Irritable bowel syndrome (IBS) is a prevalent functional gastrointestinal disorder characterized by visceral pain and gut dysmotility. However, the specific mechanisms by which strains relieve IBS remain unclear. Here, we screened strains from traditional Chinese fermented foods with potential IBS-alleviating properties through and experiments.

Background: Coronary biomechanical stress contributes to the plaque rupture and subsequent events. This study aimed to investigate the impact of plaque biomechanical stability on the physiological progression of intermediate lesions, as assessed by the radial wall strain (RWS) derived from coronary angiography.

Methods: Patients with at least one medically treated intermediate lesion at baseline who underwent follow-up coronary angiography over 6 months were included.

Pasteurization is an effective sterilization technique for the treatment of liquid egg white (LEW), but the pasteurization temperature is generally limited because increased temperature can lead to aggregation of the proteins and affect their processing properties. In this study, phosphorylation modification was used to increase the thermal stability and pasteurization temperature of LEW, aiming to enhance the pasteurization sterilizing effect. The FT-IR results showed that the phosphate groups were successfully grafted into protein molecules, improving the order degree of protein molecules.

Phenolics in bound form extensively exist in cereal dietary fiber, especially insoluble fiber, while their release profile in gastrointestinal tract and contribution to the potential positive effects of dietary fiber in modulating gut microbiota still needs to be disclosed. In this work, the composition of bound phenolics (BPs) in triticale insoluble dietary fiber (TIDF) was studied, and in vitro gastrointestinal digestion as well as colonic fermentation were performed to investigate BPs liberation and their role in regulating intestinal flora of TIDF. It turned out that most BPs were unaccessible in digestion but partly released continuously during fermentation.
