Stirred soy yogurt as a dairy alternative is widely accepted among consumers, but its poor stability has been an urgent problem. We found that Leuconostoc mesenteroides Lm10 produced dextran reduced water mobility and improved the water holding capacity of stirred soy yogurt, especially with over 4 % sucrose added which could completely prevent whey separation. With the increase of dextran content, the particle size of stirred soy yogurt was significantly decreased, accompanied by the improvement of viscoelastic behaviors and resistance to deformation.

The active metabolite ()-equol, derived from daidzein by gut microbiota, exhibits superior antioxidative activity compared with its precursor and plays a vital role in human health. As only 25% to 50% of individuals can naturally produce equol when supplied with isoflavone, we engineered probiotic Nissle 1917 (EcN) to convert dietary isoflavones into ()-equol, thus offering a strategy to mimic the gut phenotype of natural ()-equol producers. However, co-fermentation of EcN-eq with fecal bacteria revealed that gut microbial metabolites decreased NADPH levels, hindering ()-equol production.

A higher fermentation efficiency was achieved, using multistarter fermentation of glutinous rice supplemented with Fu brick tea (FGR-FBT), than when using traditional fermentation. The effects of multistarter fermentation on the microbial, chemical, and volatile compositions were determined. The transport behavior and absorption mechanism of Ala-His-Leu-Leu (AHLL) intestinal absorption in Caco-2 cell monolayers were clarified systemically. The safe absorptive concentration of AHLL was 200 μg/mL, which was determined by the 3-(4,5-dimethyl-2-thiazolyl)-2,5-diphenyl-2H-tetrazolium bromide assay.
