The effect of incorporating 4-hydroxy-2,5-dimethyl-3(2H)-furanone (furaneol) during soy protein isolate (SPI) preparation on off-flavor compounds was investigated. Sensory evaluation revealed that furaneol addition effectively reduced undesirable attributes such as grain husk, grassy, raw bean, tofu and oil oxidation, with the most significant decrease at 2 mg/L. Flavor analysis confirmed a significant reduction in both the variety and amount of off-flavors.

Odor-induced saltiness enhancement (OISE) is thought to be a unique salt reduction technique which capitalizes on olfactory-gustatory interaction. Volatile compounds of stewed duck obtained from orthonasal (no-treatment) and retronasal (saliva-treatment) pathways and their capacity on OISE were analyzed by GC-O-MS and molecular simulation in order to ascertain the role of odors in duck stewed with chili pepper on saltiness enhancement. This work concentrates on solving the finite-time H output synchronization (FTHOS) issue of directed coupled reaction-diffusion neural networks (DCRDNNs) with multiple delayed and adaptive output couplings in the presence of external disturbances. Based on the output information, an adaptive law to adjust output coupling weights and a controller are respectively developed to ensure that the DCRDNNs achieve FTHOS. Then, in the special case of no external disturbances, a corollary on the finite-time output synchronization (FTOS) of the DCRDNNs with multiple delayed and adaptive output couplings is provided.
