The droplet size, zeta potential, interface protein adsorption rate, physical stability and microrheological properties of high-pressure-homogenization (HPH)-modified, dual-protein-based whey-soy (whey protein isolate-soy protein isolate) emulsions containing different oil phase concentrations (5%, 10% and 15%; /) were compared in this paper. The in vitro digestion characteristics and storage stability of the dual-protein emulsions before and after HPH treatment were also explored. The results show that with an increase in the oil phase concentration, the droplet size and interface protein adsorption rate of the untreated dual-protein emulsions increased, while the absolute value of the zeta potential decreased.

It has been proven that high-pressure homogenization (HPH) could improve the functional properties of proteins by modifying their structure. This study researched the effect of HPH on the structural and functional properties of whey-soy dual-protein (Soy Protein Isolation-Whey Protein Isolation, SPI-WPI). Different protein solution samples were treated with HPH at 30, 60, 90, 120 and 150 MPa, and the structure changed under different pressures was analyzed by measuring particle size, zeta potential, Fourier infrared spectrum (FTIR), fluorescence spectrum and scanning electron microscope (SEM).

Diffusion and sorption of five gases (H, N, O, CO, CH) in hydrogenated nitrile butadiene rubber (HNBR) and ethylene-propylene-diene rubber (EPDM) have been investigated by molecular dynamics (MD) and grand canonical Monte Carlo (GCMC) simulations. The diffusion coefficients of gas molecules in HNBR and EPDM are well correlated with the effective penetrant diameter except for CO. CO shows a lower diffusion coefficient due to its linear shape.

In this work, the effect of β-sitosterol (Sito) on vesicle characteristics, physicochemical stability as well as the in vitro release and bioavailability of curcumin-loaded liposomes (Cur-LP) was studied. When 20-33 mol% of Sito was incorporated, encapsulation efficiency of curcumin was improved due to the high amount of liquid-ordered domains in membranes. At 50 mol% Sito a lower encapsulation efficiency was observed possibly due to membrane defects.

The effects of three kinds of sterols (cholesterol, β-sitosterol and ergosterol) on the stability, microstructure and membrane properties of soybean and egg yolk lecithin liposomes were investigated by light scattering, transmission electron microscope (TEM), atomic force microscope (AFM), fluorescence and Fourier transform infrared spectroscopy (FTIR). The vesicle size of cholesterol or β-sitosterol incorporated liposomes was higher than that of the control and ergosterol incorporated ones, while the zeta-potential was similar when the same lecithin was used. Due to the excellent emulsifying capacity, Tween-80 was introduced into the system and which could obviously maintain the liposomal vesicle size in fetal bovine serum.

MicroRNAs are closely linked to tumor metastasis and let-7a may play a role in inhibiting the proliferation, invasion, and metastasis of lung cancer. In vitro, we aim to observe the impact of let-7a on the proliferation and invasion of the nonsmall cell lung cancer cell line 95D by constructing a lentiviral vector that expresses let-7a. Cell proliferation assays and Transwell experiments were used to compare the proliferation and invasion of the 95D cell group with let-7a overexpressed or inhibited.
