The levels of capsaicin (CAP) and hydroxy-α-sanshool (α-SOH) are crucial for evaluating the spiciness and numbing sensation in spicy hotpot seasoning. Although liquid chromatography can accurately measure these compounds, the method is invasive. This study aimed to utilize hyperspectral imaging (HSI) combined with machine learning for the nondestructive detection of CAP and α-SOH in hotpot seasoning.

To explore the impacts of galactose side-chain on the prebiotic activity of xyloglucan oligosaccharides (XGOS), XGOS and de-galactosylated XGOS (DG-XGOS) were prepared from tamarind using an enzymatic method. The differences in structural features of XGOS and DG-XGOS were systematically analyzed. Their fermentation characteristics of human fecal microbiota were explored.

Article Synopsis
  • - A group of pentacyclic triterpenoids resembling glycyrrhetinic acid was created using a mix of chemical modifications and microbial methods.
  • - The newly synthesized compounds were tested for their ability to inhibit glycogen phosphorylases in vitro, showing varying levels of effectiveness.
  • - One particular compound exhibited strong inhibitory activity with an IC value of 27.7 μM, outperforming other derivatives and glycyrrhetinic acid; the study also explored the relationship between the chemical structure and activity of these inhibitors.

The natural crosslinking agent genipin has been applied widely in biomedicines and foods nowadays. Because of the special hemiacetal ring structure in its molecule, it can only be prepared by hydrolysis of geniposide according to biocatalysis. In this research, strategies including aqueous-organic biphasic catalysis and substrate fed-batch mode were adopted to improve the biocatalysis process of genipin.

The tomato iron transporter gene (LeIRT2) was introduced to Malus robusta Rehd. via Agrobacterium-mediated transformation to produce iron-deficiency tolerant apple rootstock. A total of 19 putative transformants were obtained, 11 of which were verified by PCR amplification to carry a fragment of the transgene.
