The study aimed to evaluate the effects of supplementation with Lacticaseibacillus casei CSL3 in Swiss mice immunosuppressed with cyclophosphamide on immunological, biochemical, oxidative stress, and histological parameters. The animals were distributed into four groups (control, CSL3, cyclophosphamide, and CSL3 + cyclophosphamide), where two groups were treated with L. casei CSL3 (10 log CFU mL) for 30 days, and two groups received chemotherapy (days 27 and 30-total dose of 250 mg kg).

Lean healthcare visual management has been successfully integrated into infection control programs, leading to lower healthcare-associated infection (HAI) rates and greater provider compliance with evidence-based prevention practices; however, its implementation during quality improvement (QI) initiatives in limited-resource settings has not yet been well exploited. We aimed to describe a low-cost strategy involving Kamishibai cards to sustain bundles' adherence to prevent HAIs in a middle-income country. This descriptive case study evaluated the implementation of a lean healthcare visual management tool-Kamishibai board (K-board)-during a nationwide QI collaborative preventing three critical HAIs in 189 adult and pediatric/neonatal intensive care units (ICUs) from September 2021 to January 2023.

Pediococcus pentosaceus is a lactic acid bacterium that has probiotic potential proven by studies. However, its viability can be affected by adverse conditions such as storage, heat stress, and even gastrointestinal passage. Thus, the aim of the present study was to microencapsulate and characterize microcapsules obtained by spray drying and produced only with whey powder (W) or whey powder combined with pectin (WP) or xanthan (WX) in the protection of P.

The growing number of Listeria monocytogenes strains displaying increased tolerance to sanitizers widely applied in the food industry is becoming a problem. The aims of this study were to evaluate the susceptibility of L. monocytogenes isolates from food and food industry environments to sanitizers (benzalkonium chloride, sodium hypochlorite, peracetic acid, and chlorhexidine) and heavy metals (cadmium chloride), as well as to investigate the presence of the main genes related to efflux pumps.

Abstract: The traffic in international animal products can become a public health hazard when legal import sanitary procedures are not followed. In Brazil, due to its extensive border area, the importation of animal products is a common practice in many areas, especially in Rio Grande do Sul, a state that borders Argentina and Uruguay. The objective of this study was to evaluate the presence of veterinary drug residues (antibiotics and antiparasitics) in animal products consumed in Rio Grande do Sul.

Clinical evidence suggests that neuroinflammation, activation of the immune system, and the composition of the intestinal microbiota are involved in the pathology of depression. This study evaluated the effectiveness of a probiotic intervention using Lactococcus lactis subsp. cremoris LL95 in ameliorating mood disorders in a lipopolysaccharide (LPS)-induced depression-like mouse model.

spp causes foodborne diseases related to the consumption of contaminated foods, especially poultry products. This study aimed to investigate the occurrence of spp. serovars in raw eggs from supermarkets and street food markets in southern Brazil, to analyze virulence genes, resistance profiling to antimicrobials and sanitizers, and to determine the susceptibility of the isolates to extract.

Article Synopsis
  • * Results showed that isolates were categorized into two main lineages, with lineage I displaying higher invasion capabilities in human cells and expressing a specific virulence factor called InlA.
  • * isolates from lineage II exhibited lower invasion rates due to a lack of InlA expression or mutations that caused malfunction, indicating differences in virulence potential linked to the isolates' genetic backgrounds.

The main goals of this study were to identify whether key processes involved in microbial soil nitrogen transformations, such as diazotrophic activity and denitrification, the chemical properties of limiting elements in the soil, and microbial community structure, differ in the different successional stages of two long term chronosequences in maritime Antarctica. Moreover, we expect the rates of diazotrophic activity and denitrification to be stimulated by increases in air temperature and moisture. To answer these questions, we selected three stages in the succession (early, mid and late) in each of two well established chronosequences: three raised beaches in Ardley Island; and the Barton Peninsula, which includes two cosmogenically dated sites and the forefield of the Fourcade glacier.

Staphylococcus aureus is one of the most common pathogens associated with food poisoning, which is caused by the ingestion of food contaminated with staphylococcal enterotoxins (SE). Our study aims at evaluating the occurrence and expression of five SE genes (sea, seb, sec, sed, and see) in S. aureus previously isolated from broiler carcasses.

This study investigated the ability of isolates from milk to form biofilm, through detection of adhesion genes, investigating exopolysaccharide (EPS) production and biofilm formation on polystyrene (PS) and stainless steel (SS) surfaces, and by quantifying the expression of and genes under different temperatures and culture media. Among the 31 isolates, the adhesion genes and were found in 81% and 61% of the isolates, respectively. The screening tests for phenotype revealed that 58% of the isolates were EPS producers, and 45% showed the ability to produce biofilm on PS.

Article Synopsis
  • - The study assessed the biofilm formation ability of poultry isolates under various conditions, including different surfaces (stainless steel, polystyrene), temperatures (7, 25, and 42 °C), and oxygen levels (microaerophilic and aerobic).
  • - All isolates successfully formed biofilm on both surfaces across the tested conditions, particularly thriving in dual-species scenarios where biofilm formation increased significantly at lower temperatures (7 °C).
  • - Ten genes related to biofilm formation were identified in the isolates, with some detected across all samples, raising concerns about the ability of these poultry isolates to form resilient biofilms under diverse environments.

Article Synopsis
  • The study examined sushi from Pelotas, Brazil, to assess the presence of Listeria monocytogenes, a pathogen linked to ready-to-eat fish products.
  • They found L. monocytogenes in 21.4% of sushi samples from two establishments, and all isolates belonged to the virulent serotype 4b.
  • The research highlighted biofilm-forming abilities of the isolates on stainless steel and raised concerns about the potential risk of listeriosis from sushi consumption, emphasizing the need for better sanitation practices in sushi restaurants.

Article Synopsis
  • The study aimed to assess the prevalence of thermophilic Campylobacter in broiler farms and slaughterhouses in southern Brazil, revealing that 53.6% of samples tested positive for C. jejuni.
  • Resistance to certain antibiotics was significant, with 74% of isolates resistant to nalidixic acid and 67.3% to enrofloxacin, but no resistance was found to macrolides recommended for treating human infections.
  • Genetic analysis identified eight distinct patterns of C. jejuni, all carrying major virulence genes, indicating that the pathogen poses a risk to consumers by contaminating chicken products and potentially causing illness.

Campylobacter jejuni is the most common bacterial cause of foodborne diarrheal disease worldwide and is among the antimicrobial resistant "priority pathogens" that pose greatest threat to public health. The genomes of two C. jejuni isolated from poultry meat sold on the retail market in Southern Brazil phenotypically characterized as multidrug-resistant (CJ100) and susceptible (CJ104) were sequenced and analyzed by bioinformatic tools.

The development of standardized and safe food products with the typical characteristics of each region is highly desirable and can be obtained by using native starter cultures that influence the flavor, texture, and color of fermented foods. Therefore, scientists have been employing various techniques for screening and characterizing native bacteria (lactic acid bacteria and Gram-positive catalase-positive cocci) for application in fermented meat sausage. The present review outlines in vitro assays that evaluate the potential application and safety aspects of native isolates and introduces emerging omics technologies applied to the microbiology of fermented meat sausage.
