Oligosaccharide characterization has been of utmost interest in various areas such as medicine, biochemistry, and food chemistry. Therefore, liquid chromatography-electrospray ionization mass spectrometry (LC-ESI-MS) was applied to characterize the acetolysis of mannan from Saccharomyces cerevisiae.
