The present study aimed to characterize the phenotypic diversity of agronomical and biochemical fruit quality traits in four early peach cultivars. The sensibility to chilling injury symptoms (CI) was studied after two cold storage periods (2 and 4 weeks) at 5 ºC and 95% relative humidity (RH) followed by 2 days at room temperature. Agronomical attributes such as fruit weight, firmness, soluble solids content (SSC), pH, titratable acidity (TA) and color parameters were recorded.

Pomological traits, l-ascorbic acid, flavonoids, total phenolics, relative antioxidant capacity (RAC) and sugars were determined. Major symptoms of CI developed at 5 °C, such as leatheriness, flesh browning, bleeding and loss of flavor, were evaluated.
