Human milk (HM) modifications over time represent an important issue. This work proposed to evaluate the changes in HM during one-year storage through total lipids (TL) degradation and portable near-infrared (NIR) spectrometer combined with chemometrics. Colostrum, transition, and mature stages were obtained from donors and considered in the raw and pasteurized forms.

The ethanolic extract showed high antioxidant potential and 39 compounds were identified, by UPLC/HRMS, among them one not yet mentioned in the literature for stevia leaves. From the in natura leaves and pretreated leaves, the conditions of aqueous extraction of steviol glycosides were investigated using response surface methodology.

We have developed a metabolic pathways visualization skill test (MPVST) to gain greater insight into our students' abilities to comprehend the visual information presented in metabolic pathways diagrams. The test is able to discriminate students' visualization ability with respect to six specific visualization skills that we identified as key to the understanding of metabolic map diagrams. Application of the MPVST to B.
